What I'm cooking: Pain perdu (eggy bread/French toast) with clementines and a little dollop of crème fraîche.

I can't start the day without: A cup of
tea
My signature dish: I don't have a
signature dish as such. I find a lot of my inspiration at my local
fresh food market. Seasonal and fresh are my signature
flavours.
I have many:Tea cups

The taste I can't live without:
Chilli or cheese
Every kitchen should have: A sharp
chef's knife
Ingredients I swear by: Full fat crème
fraîche from my local cheesemonger and fleur de sel (the French
equivalent of Maldon sea salt).

The best thing about Belleville, my local neighbourhood: The local characters and the vibrant mix of cultures.

If I could cook for anyone, it would
be: Jean Dujardin (the actor from The Artist) and
his wife, Alexandra Lamy. I used to watch their comedy show Un
gars et une fille on French TV when I first moved to
Paris. It was hilarious and a great way of improving my
French.
My top five meals:
- Whatever is on the menu at Septime, 80 rue Charonne, 75011 Paris
- The Paris Brest at Pâtisserie de Rêves, 93 rue du Bac, 75007 Paris
- Butternut panna cotta at Frenchie Wine Bar, 5-6 rue du Nil, 75002 Paris
- Pan fried chicken livers at Aux Deux Amis, 45 rue Oberkampf, 75011 Paris
- And to detox from all the French food, a fresh juice with lots of ginger from Bob's juice bar 10 rue Lucien Sampaix 75010 Paris.
