I especially loved both the floral bouquet and the jam sandwich, but ultimately, I chose the cake that I really wanted to eat. "There were so many fantastic entries, but my favourite cake would have to be the Floral Bouquet, made by Barbara Corbett. There was a lot of skill in the cake; not only piping, but making the sugar roses and leaves. The colours, as Barbara said, were perfect for a Jubilee - or even an Olympic - celebration. The flavours were well thought out, and I love that Barbara used her own homemade jam to fill the cake. My other favourites were the baked egg and sponge soldiers - an inspired design!- and the beautifully decorated Union Jack cupcakes." Fiona Cairns

How the Cake-Off worksDo you consider yourself the queen (or king) of cakes? Are you the Michelangelo of cake decorating? Would you like to share your cake creativity with the world? We have the competition for you! All you need to do is get creative with one of Easy Living's all-time favourite cake recipes, Simple Chocolate Cake or Simple Vanilla Cake (both pictured below).
Our expert panel of judges, including Fiona Cairns (baker of Kate and William's royal wedding cake), Eric Lanlard (of Channel 4's Baking Mad) and Easy Living's Food Editor David Herbert will choose the top cake. The prize? The winner of our Cake-Off competition will enjoy a photo shoot in Easy Living's London kitchen, where they'll recreate their cake step-by-step to be featured on the site. They'll also win a swish afternoon tea for two at London's Jumeirah Carlton Tower, along with baking goodies galore.
How to enterJust take a look at our Simple Chocolate Cake and Simple Vanilla Cake recipes. Choose a cake to bake (or make both!) and then get creative! Post a picture of your cake to our Facebook wall, email us at email@example.com with "Cake Off" in the subject line, or tweet @EasyLivingMag using #cakeoff with a brief description on how you got creative with our cake recipe. Your efforts will be judged both on the photo, and your description - so don't forget to include both!
We'll put all of the submissions to a reader vote, with the top 10 entries being sent to our expert judges, who will decide the winner.
All entries must be received by Friday 1 June at 5pm to be eligible for the reader vote. You can submit as many entries as you wish.
The judgesFiona Cairns, author of cake bible Bake and Decorate, began her business at her kitchen table 25 years ago, and the bakery now makes 27,000 fairy cakes a week. That's not to mention her most prominent commission - tasked with baking the royal wedding cake for Kate Middleton and Prince William. Eric Lanlard is a master patissier with an A-list clientele and four cookery shows for Channel 4 under his belt including Baking Mad and Glamour Puds. With a bustling cake shop, Cake Boy, based in London along four cookbooks including Glamour Cakes, Master Cakes, Home Bake and Cox Cookies & Cake - it's safe to say that Eric knows cakes! David Herbert is Easy Living's much loved Food Editor and has a culinary CV to envy, from making tea for the Queen Mother to being a private chef for A-listers and the Australian prime minister. David is the author of several cookbooks in his native Australia - including Complete Perfect Recipes and The Really Useful Cookbook - which have gone on to become cult classics in England, selling out in a matter of days. His most recent, David Herbert's Best Ever Baking Recipes, has just been released in Australia.
