Chicken

Fried with garlic and Merguez sausages

  • Heat the oven to 180ºC (gas mark 4). Heat the oil in a large frying pan and sauté the potatoes for about 5 minutes. Transfer to a large lidded casserole dish.
  • Season the chicken pieces well with salt and freshly ground black pepper. Fry the chicken in the frying pan (adding a little extra oil, if needed) over a moderate heat, turning once until golden. Transfer chicken to the casserole.
  • Return the pan to the heat, add the sausages and cook until they start to colour. Add these to the casserole along with the garlic, thyme and lemon quarters.
  • Cover with a lid and cook in the oven for about 50-55 minutes, or until the chicken is cooked. Bring the casserole dish to the table and serve with a large green salad. Spoon over any of the juices from the bottom of the pan.
