Crispy skinned salmon

  • Heat a little olive oil in a non-stick frying pan over a high heat
  • Season a salmon fillet with salt and freshly ground black pepper
  • Add the fillet to the hot pan and cook, skin-side down, for 3 minutes or until the skin is crisp. Turn and cook the other side for 2 minutes
