Grilled salmon with couscous

  • Put 100g (3½oz) of couscous into a heatproof bowl and pour over 150ml (5fl oz) of boiling vegetable stock or water
  • Stir, then cover with clingfilm and leave for 10 minutes
  • Meanwhile, heat a griddle pan over a high heat and cook a salmon fillet, skin-side down, for 3 minutes, then turn and cook the other side for 2 minutes
  • Stir the olive oil, cherry tomatoes, coriander, red chilli and the grated zest of 1 lemon into the couscous, season well and serve with the salmon.
