Salmon fritters

  • Whisk the egg with the self-raising flour and plain natural yoghurt in a bowl
  • Chop up the raw salmon and add to the egg, flour and yoghurt mix
  • Stir in the grated courgette, sliced spring onions, chopped chives and the grated lemon zest
  • Season well, then fry heaped tablespoons of the mixture in batches in a little oil in a large frying pan, until golden on both sides

  • 1 large salmon fillet, approx 250g (8oz)
  • 1 egg
  • 100g (3½oz) self-raising flour
  • 2tbsp of plain natural yoghurt
  • 1 small courgette, grated
  • 4 spring onions, sliced
  • 3tbsp chives, chopped
  • Grated zest of 1 lemon
