Salmon tartare

  • Cut a raw salmon fillet into ½cm (¼in) cubes, or pulse in a food processor
  • Combine some good-quality mayonnaise with chopped capers and a little wholegrain mustard, then stir it through the chopped salmon
  • Season, then serve with a wedge of lemon
