Salmon tortilla, Mexican-style

  • Brush a soft tortilla with water and put in an oven heated to 180°C (gas mark 4) for 5 minutes
  • Lightly brush a salmon fillet with oil and roast for a further 8-10 minutes
  • Combine chopped avocado, chopped tomato, sliced spring onions, sliced red chilli, the lime juice and sour cream in a bowl and season
  • Fill the tortilla with the mixture, then flake the cooked salmon over the top. Roll up and serve

  • Juice of 1 lime
  • 3tbsp sour cream
