Ingredients
- Olive oil
- 120g (4oz) chorizo, sliced
- 1 clove garlic, crushed
- 2 courgettes, grated or cut into julienne strips
- 500g (1lb) homemade or ready-made gnocchi
- Basil leaves, to serve
- Freshly grated parmesan, to serve
Method
- Heat 1tsp oil in a large frying pan and add the chorizo slices. Cook for 2-3 mins, turning once. Add the garlic and courgettes and cook, stirring, for 2-3 mins.
- Meanwhile, cook the gnocchi in a large saucepan of boiling salted water for 1-2 mins, or until they rise to the top. Drain well and transfer to the pan containing the courgettes.
- Gently mix the gnocchi and courgettes. Season, then drizzle with olive oil and serve topped with basil leaves and Parmesan.
