Spaghetti With Fresh Tomato Sauce

ingredients

  • 500g (1lb) ripe tomatoes
  • 2 chopped cloves garlic
  • 3tbsp shredded basil
  • 4tbsp extra virgin olive oil
  • TO SERVE
  • Extra virgin olive oil
  • Freshly grated Parmesan

method

  1. Dice the tomatoes, discarding any of the seeds.
  2. Place in a bowl with the chopped garlic, shredded basil and extra virgin olive oil.
  3. Cook enough pasta for 4 people, drain and return it to the saucepan.
  4. Stir in the tomatoes, season to taste and serve.
