- 500g (1lb) ripe tomatoes
- 2 chopped cloves garlic
- 3tbsp shredded basil
- 4tbsp extra virgin olive oil
- Extra virgin olive oil
- Freshly grated Parmesan
- Dice the tomatoes, discarding any of the seeds.
- Place in a bowl with the chopped garlic, shredded basil and extra virgin olive oil.
- Cook enough pasta for 4 people, drain and return it to the saucepan.
- Stir in the tomatoes, season to taste and serve.
