Eton mess

  • Hull and roughly chop the strawberries. Sprinkle over the icing sugar and, if desired, the flavoured brandy.
  • Chill for 20 minutes. In the meantime, whip the cream until it forms soft peaks.
  • Fold the whipped cream into the strawberries and juice. Break the meringues into bite-size pieces and fold into the mixture.
  • Serve immediately, in small bowls or large wine glasses.
