Bread sauce

  • Place the onion, bay leaves, cloves, peppercorns and milk in a saucepan and bring to the boil.
  • Reduce the heat and simmer for 5 minutes. Remove from the heat, cover and leave for 1 hour.
  • Strain the mixture and return the milk to the saucepan. Bring it to the boil, stir in the breadcrumbs and simmer, stirring frequently, for 5-7 minutes. Add the cream and cayenne pepper.
  • The sauce should be quite thick, but you can add a little extra milk or cream to thin, if necessary. Season with salt and pepper, to taste.

  • 250g (8oz) fresh breadcrumbs
  • 200ml (7½fl oz) single cream
  • Good pinch of cayenne
