Redcurrant jelly

  • Put the fruit, sugar and 4tbsp of water into a large saucepan. Crush the fruit slightly, then bring to a boil, stirring to dissolve the sugar.
  • Boil rapidly for 8 minutes, stirring occasionally. Skim off any scum on the surface.
  • Strain the mixture through a very fine or muslin-lined sieve into a jug. Don't press the fruit while it drains. Pour into clean jars and seal when cool.
