Put the fruit, lemon juice and 4tbsp of water into a large saucepan and simmer over a low heat for 10 minutes, or until the fruit is soft.
Add the sugar and stir until dissolved. Bring to the boil and continue to boil steadily, uncovered, for 30-40 minutes or until setting point is reached. Remove from the heat and stir in the butter. Skim off any scum on the surface.
Let the jam sit for 20 minutes, then spoon into clean jars. Seal and label when cool.
