Simple berry jam

  • Put the fruit, lemon juice and 4tbsp of water into a large saucepan and simmer over a low heat for 10 minutes, or until the fruit is soft.
  • Add the sugar and stir until dissolved. Bring to the boil and continue to boil steadily, uncovered, for 30-40 minutes or until setting point is reached. Remove from the heat and stir in the butter. Skim off any scum on the surface.
  • Let the jam sit for 20 minutes, then spoon into clean jars. Seal and label when cool.
