Slow-roasted tomatoes

  • Cut the tomatoes in half lengthways and place cut-side up on a lightly greased oven tray.
  • Drizzle with olive oil and season. Place in an oven heated to 120°C (gas mark ½) for 1½-2 hours, or until the tomatoes are lightly dried and darkened but still retain some moisture.
